    Prepare the Ingredients

    Chop the shallots, mince the garlic, and dice the chorizo. Roughly chop the sundried tomatoes and rinse the spinach.

    Cook the Chorizo

    In a large oven-safe skillet, heat olive oil over medium heat. Add the diced chorizo and cook until browned and slightly crispy, about 5 minutes.

    Sauté the Vegetables

    Add the chopped shallots and minced garlic to the skillet. Sauté for 2-3 minutes until shallots are translucent. Then add the spinach and frisée. Cook until wilted.

    Mix the Eggs

    In a bowl, whisk the eggs and season with salt and black pepper. Pour the egg mixture over the chorizo and vegetables in the skillet.

    Add Sundried Tomatoes

    Sprinkle the sundried tomatoes evenly over the top of the egg mixture.

    Cook the Frittata

    Cook on the stovetop for 3-4 minutes until the edges start to set. Then transfer the skillet to the preheated oven at 375°F (190°C) and bake for about 15-20 minutes until the frittata is set and lightly golden on top.

    Let the frittata cool for a few minutes before slicing. Serve warm or at room temperature.
