Roast the Beets
Preheat the oven to 400°F (200°C). Wash the beets thoroughly, then wrap each one in aluminum foil. Place them on a baking sheet and roast in the oven for about 45-60 minutes, or until they are tender when pierced with a fork. Once done, let them cool, then peel the skin off and cut into wedges.

Candied Pecans
In a small saucepan, melt the butter over medium heat. Add the pecans and brown sugar, stirring continuously until the sugar has melted and the pecans are coated. Spread the pecans on a baking sheet lined with parchment paper and let them cool.

Prepare the Dish
In a serving dish, arrange the roasted beet wedges. Crumble the fior di latte cheese on top and sprinkle with fresh dill. Add the candied pecans for crunch.

Season and Serve
Drizzle the olive oil over the top, season with salt and black pepper to taste, and serve immediately.
