Prepare the Rabbit
In a large skillet or Dutch oven, heat the olive oil over medium heat. Season the rabbit pieces with salt and black pepper, then add them to the skillet. Brown the rabbit on all sides, about 5-7 minutes.

Deglaze and Simmer
Pour in the white wine, scraping the bottom of the skillet to deglaze. Allow the wine to simmer for 2-3 minutes to reduce slightly.

Add Broth and Thyme
Add the chicken broth and fresh thyme to the skillet. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for about 40 minutes.

Stir in Olives
After 40 minutes, add the pitted green olives to the skillet. Stir well and continue to cook for another 10-15 minutes until the rabbit is tender and cooked through.

Taste and adjust seasoning as necessary. Serve hot, garnished with fresh thyme if desired.
