    Make the Dough

    In a large bowl, mix the flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Filling

    Prepare the Filling

    In a bowl, combine pumpkin puree, ricotta cheese, Parmesan cheese, nutmeg, and salt. Mix until smooth and set aside.

Assembly

    Assemble the Ravioli

    Roll out the pasta dough into thin sheets. Place small spoonfuls of filling onto one sheet, then cover with another sheet. Cut into squares and seal the edges with a fork.

Cooking

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes or until they float. Remove with a slotted spoon.

Sauce

    Make the Sauce

    In a skillet, melt the butter over medium heat. Add fresh cranberries and sage leaves, cooking until the cranberries burst and the butter turns brown. Toss in the pumpkin seeds for the last minute.

    Plate the ravioli, spoon the brown butter sauce over them, and garnish with additional pumpkin seeds if desired.
