Porchetta Preparation

Prepare the Pork
Score the skin of the pork belly in a crosshatch pattern. Rub the salt, black pepper, fennel seeds, minced garlic, rosemary, thyme, and olive oil all over the pork belly. Roll it tightly and tie with kitchen twine. Let it marinate in the fridge for at least 4 hours, preferably overnight.

Roast the Pork
Preheat your oven to 375°F (190°C). Place the pork on a rack in a roasting pan. Roast for about 2 hours, or until the internal temperature reaches 160°F (70°C) and the skin is crispy. Allow it to rest for 20 minutes before slicing.

Caramelize the Onions
In a large skillet, melt the butter over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until they are caramelized, about 20 minutes.

Roast the Apples
In a separate dish, toss the quartered apples with brown sugar and cinnamon. Place them in the oven during the last 30 minutes of the pork roasting, until they are soft and caramelized.

Slice the porchetta and serve it warm, topped with caramelized onions and roasted apples.
