Prep the Saffron
Soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.

Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Cream Butter and Sugar
In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.

Add Eggs and Flavorings
Beat in the eggs, one at a time, then stir in the soaked saffron (with water), vanilla extract, and chopped pistachios.

Combine Mixtures
Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.

Shape and Bake
Preheat the oven to 350°F (175°C). Divide the dough into two logs on a parchment-lined baking sheet. Flatten them slightly and bake for 25-30 minutes.

Cool and Slice
Remove from the oven and let cool for 10 minutes. Slice the logs into 1/2-inch thick pieces. Arrange the slices cut side down on the baking sheet.

Bake the biscotti again for 10-15 minutes until golden and crisp. Let cool completely before serving.
