Method

Panna Cotta Preparation

    Prepare the Gelatin

    Sprinkle gelatin over 3 tablespoons of cold water in a small bowl. Let it sit for about 5 minutes until it blooms.

    Heat the Cream

    In a saucepan, combine heavy cream, sugar, and vanilla extract. Heat over medium heat until sugar is dissolved, but do not bring to a boil.

    Combine with Nutella

    Remove the saucepan from heat and whisk in Nutella and the bloomed gelatin until smooth.

    Chill

    Pour the mixture into serving cups and refrigerate for at least 4 hours or until set.

Bruléed Banana Preparation

    Slice the Bananas

    Cut the bananas in half lengthwise and place them cut side up on a baking sheet.

    Caramelize

    Sprinkle sugar evenly over the bananas and use a torch to bruléed them until golden and caramelized.

Hazelnut Sponge Toffee Preparation

    Cook the Sugar

    In a saucepan, combine sugar and corn syrup. Cook on medium heat until the mixture reaches a light golden color.

    Add Baking Soda

    Remove from heat and quickly stir in baking soda. The mixture will foam up.

    Add Hazelnuts

    Stir in chopped hazelnuts and pour onto a parchment-lined baking sheet to cool. Once cool, break into pieces.

Assembly

    Serve

    Once the panna cotta has set, top with bruléed bananas, pieces of hazelnut sponge toffee, and garnish with whole hazelnuts.
