Prepare the Mushroom Filling
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add sliced mushrooms, salt, and black pepper, cooking until the mushrooms are tender and any liquid has evaporated, about 8-10 minutes. Set aside.

Layer the Lasagna
Preheat your oven to 180°C (350°F). In a large baking dish, spread a thin layer of white sauce on the bottom. Layer 4 lasagna noodles over the sauce, followed by half of the mushroom mixture, half of the Fontina cheese, and a layer of white sauce. Repeat the layers, ending with the remaining noodles on top.

Finish with Cheese and Sauce
Spread the remaining white sauce over the top layer of noodles, sprinkle with grated Parmesan cheese and drizzle with white truffle oil. Cover the dish with foil.

Bake
Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.

Remove from the oven, let it rest for 10 minutes, then garnish with fresh parsley before slicing and serving.
