Cook the Risotto
In a saucepan, heat the vegetable broth and keep it warm. In another pan, sauté the onion in olive oil until translucent. Add the Arborio rice and stir for a few minutes. Gradually add the warm broth, stirring constantly until the rice is creamy and cooked (about 20 minutes). Stir in squid ink and Parmesan cheese. Let cool.

Form and Fry
Once cooled, form the risotto into balls, dip in beaten egg, and then coat with breadcrumbs. Heat olive oil in a frying pan and fry the arancini until golden brown. Drain on paper towels.

Finish the Dish
Stir in chopped parsley and lemon juice. Serve warm.
Stuffed Fried Olives

Prepare the Filling
Mix cream cheese and prosciutto until well combined. Stuff each pitted olive with the mixture.

Skewer and Grill
Thread marinated octopus onto soaked skewers. Grill on medium-high heat for about 3-4 minutes on each side until cooked through.
