    Prepare Ingredients

    Start by chopping the wild boar bacon into small pieces. Grate the Grana Padano cheese and set aside. Beat the fresh eggs in a bowl and mix in half of the grated cheese, salt, and black pepper.

    Cook the Pasta

    In a large pot of boiling salted water, cook the linguine pasta according to package instructions until al dente. Reserve about 1 cup of the pasta cooking water before draining.

    Cook the Bacon

    In a large skillet, heat the olive oil over medium heat. Add the chopped wild boar bacon and cook until crispy, about 5-7 minutes. Add chili flakes and stir to combine.

    Combine Pasta and Sauce

    Add the drained linguine to the skillet with the bacon. Toss to combine over low heat. Remove from heat and quickly pour in the egg and cheese mixture, tossing continuously to create a creamy sauce. If it's too thick, add reserved pasta water as needed.

    Serve immediately, topped with the remaining Grana Padano cheese, additional black pepper, and extra chili flakes if desired.
