Arancini Cake Preparation

    In a saucepan, bring the vegetable broth to a boil. Add the Arborio rice, reduce heat to low, and simmer until the rice is tender and the broth is absorbed, about 18-20 minutes. Let it cool.

    In a large bowl, combine the cooked rice, Parmesan cheese, beaten egg, parsley, salt, and black pepper. Mix until well combined.

    Shape the mixture into small cakes, about 2 inches in diameter. Roll them in breadcrumbs to coat.

    In a skillet, heat olive oil over medium heat. Fry the arancini cakes until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Tomato, Black Olive, and Artichoke Salad Preparation
