Method

For Grissini

  1. 1

    Prepare the Dough

In a bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour, salt, and black pepper. Gradually add the yeast mixture and olive oil, mixing until a dough forms.

  2. 2

    Knead and Rise

Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.

  3. 3

    Shape the Grissini

Preheat the oven to 400°F (200°C). Punch down the dough and roll it out to about 1/4 inch thick. Cut into strips and twist each strip. Place on a baking sheet lined with parchment paper. Brush with olive oil and sprinkle with sesame seeds.

  4. 4

    Bake

Bake for 15-20 minutes until golden brown. Let cool before serving.

For Rustic Toast

  1. 5

    Prepare the Baguette

Slice the baguette into 1/2 inch thick pieces. Brush both sides with olive oil and sprinkle with salt.

  2. 6

    Toast

Heat a grill pan over medium heat and toast the bread slices on both sides until golden brown. Rub the toasted slices with a garlic clove while still warm.

For Parmesan Crostini

  1. 7

    Prepare the Crostini

Slice the baguette into 1/2 inch thick pieces. Arrange on a baking sheet and brush with olive oil.

  2. 8

    Add Cheese and Bake

Sprinkle grated Parmesan cheese on top of each slice. Bake in a preheated oven at 400°F (200°C) for about 10-12 minutes until the cheese is melted and bubbly. Sprinkle with black pepper before serving.
