Method
Prepare the Gnudi

Mix Ingredients
In a large bowl, combine ricotta cheese, flour, egg, and salt. Mix until a dough forms.

Form Gnudi
Dust a clean surface with flour. Take small portions of the dough and roll them into balls (about the size of a walnut). Place on a floured tray.

Chill
Cover the tray with plastic wrap and refrigerate for at least 30 minutes to firm up.
Cook the Wild Mushroom Sauce

Sauté Aromatics
In a large skillet, heat olive oil over medium heat. Add chopped shallots and minced garlic, sauté until translucent.

Deglaze with Wine
Pour in the white wine, bringing it to a simmer to reduce for about 3-4 minutes.

Add Cream and Peas
Stir in the heavy cream and sweet peas. Cook for an additional 3-5 minutes, until heated through. Season with salt and pepper.
Cook the Gnudi

Boil Water
Bring a large pot of salted water to a gentle boil.

Cook Gnudi
Carefully drop the gnudi into the boiling water. They are ready when they float to the surface, about 2-3 minutes.

Combine with Sauce
Using a slotted spoon, transfer the gnudi to the sauce. Toss gently to coat.

Finish with Truffle Oil
Drizzle truffle oil over the gnudi before serving.
