Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    Mix Dry Ingredients

    In a bowl, whisk together the flour, baking powder, and poppy seeds.

    Cream Butter and Sugar

    In another bowl, cream together the butter and sugar until light and fluffy.

    Add Eggs and Vanilla

    Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine Mixtures

    Gradually add the dry mixture to the wet mixture, alternating with the milk, and mix until smooth.

    Pour batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean.

Filling Preparation

    Prepare the Filling

    In a saucepan, combine sliced strawberries, chopped rhubarb, sugar, lemon juice, and lemon zest. Cook over medium heat until the rhubarb is tender and the mixture is bubbly, about 10-15 minutes. Let it cool slightly.

    Once the cake has cooled, slice it in half horizontally. Spread lemon curd on the bottom layer, add the fruit filling, and then place the top layer of the cake back on.
