Method

Roasting the Cornish Hen

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Hen

    Pat the Cornish hens dry with paper towels. Rub them with olive oil, minced garlic, chopped rosemary, salt, and pepper.

    Roast the Hen

    Place the hens breast-side up in a roasting pan. Roast in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (74°C).

    Rest the Hen

    Remove the hens from the oven and let them rest for 10 minutes before carving.

Making the Chestnut Panzenella

    Prepare the Bread

    Cut the stale bread into cubes and place in a large bowl.

    Add the Vegetables

    Add roasted chestnuts, cherry tomatoes, diced red onion, and chopped parsley to the bowl with the bread.

    Dress the Salad

    In a separate bowl, whisk together red wine vinegar, extra virgin olive oil, salt, and pepper. Pour over the bread mixture and toss to combine.

    Allow the panzenella to sit for at least 15 minutes before serving to let the flavors meld.
