Preparing the Foie Gras Ice Cream
1. Blend and Cook
In a blender, combine foie gras, heavy cream, milk, sugar, salt, and vanilla extract. Blend until smooth. In a saucepan, heat the mixture over medium heat until it just begins to simmer, stirring constantly.
2. Temper the Egg Yolks
In a bowl, whisk the egg yolks. Gradually add a small amount of the hot mixture to the yolks to temper them. Then, return the yolk mixture to the saucepan and cook on low heat until it thickens enough to coat the back of a spoon.
3. Chill and Freeze
Remove from heat, strain through a fine sieve, and cool completely in the refrigerator. Once chilled, churn in an ice cream maker according to manufacturer’s instructions.
Making the Profiteroles
4. Prepare the Dough
In a saucepan, combine butter, water, and salt. Bring to a boil. Remove from heat and stir in flour until smooth. Let the mixture cool slightly before adding eggs one at a time, mixing well after each addition.
5. Bake the Profiteroles
Preheat the oven to 200°C (400°F). Pipe or spoon the dough onto a baking tray lined with parchment paper. Bake for 20-25 minutes or until golden and puffed. Allow to cool.
