Method
Making the Truffles

Melt the Chocolate
Chop the dark chocolate into small pieces and place in a heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for a few minutes to melt.

Combine Ingredients
Stir the chocolate and cream mixture until smooth. Add the almond extract and mix until fully incorporated.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for about 1-2 hours, or until the mixture is firm enough to scoop.

Form the Truffles
Once the mixture is firm, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter).

Coat the Truffles
Roll the truffles in the chopped almonds and then in the cocoa powder to coat. Place them on a parchment-lined tray.
Serving

Garnish and Serve
Top each truffle with a whole almond and a pinch of sea salt. Serve immediately or store in an airtight container in the fridge.
