Pâté Preparation

Prepare the Pâté
In a skillet, melt the unsalted butter over medium heat. Add chopped shallots and sauté until translucent. Add duck liver, salt, pepper, and thyme. Cook until the liver is browned. Add brandy and cook for an additional 5 minutes. Let it cool slightly before blending until smooth. Chill in the refrigerator for at least 2 hours.

Prepare Vanilla Cherries
In a small saucepan, combine cherries, sugar, and vanilla extract. Cook over low heat until the cherries release their juices and the mixture thickens slightly. Remove from heat and let cool.

Assemble the Dish
On a serving plate, spread a generous amount of the pâté. Top with frisée lettuce, arrange smoked duck slices and sprinkle hazelnuts. Add the prepared vanilla cherries on top and place squash chips on the side.
