    Prepare the Rabbit

    In a large pot, melt the butter over medium heat. Add the finely chopped onion and minced garlic. Sauté until translucent.

    Cook the Rabbit

    Add the rabbit meat to the pot, along with the thyme, salt, and black pepper. Sauté until the rabbit is browned on all sides.

    Deglaze the Pot

    Pour in the white wine and let it simmer for about 5 minutes, scraping up any browned bits from the bottom of the pot.

    Add Carrots and Simmer

    Chop the carrots into small pieces and add them to the pot. Cover and simmer on low heat for about 1.5 hours, or until the rabbit is tender.

    Shred the Rabbit

    Once cooked, remove the rabbit from the pot and shred the meat using forks. Discard any bones.

    Combine Ingredients

    Mix the shredded rabbit with the sautéed carrots and onion. Stir in the mustard until well combined.

    Transfer the rillettes to a serving dish and let them cool to room temperature. Serve with crusty bread.
