Method

Preparing the Turkey

    Marinate the Turkey

    In a bowl, combine chopped rosemary, minced garlic, fennel seeds, olive oil, salt, and black pepper. Rub this mixture all over the turkey breast, cover, and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Roast the Turkey

    Preheat the oven to 375°F (190°C). Place the marinated turkey breast in a roasting pan and roast for about 1.5 hours, or until the internal temperature reaches 165°F (75°C). Let it rest for 15 minutes before slicing.

Making the Mashed Potatoes

    Cook the Potatoes

    In a large pot, cover the cubed potatoes with water and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain well.

    Mash and Mix

    In the same pot, add butter, heavy cream, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Keep warm until serving.

Preparing the Bone Reduction

    Make the Bone Broth

    In a large pot, combine turkey bones, chopped carrots, celery, onion, and water. Bring to a boil, then reduce heat and simmer for 2-3 hours. Strain the broth, discarding solids, and reduce it further in a saucepan until thickened.
