Method

Cooking the Pasta

  1. 1

    Boil the Pasta

In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Preparing the Sauce

  1. 2

    Cook the Bacon

In a large skillet over medium heat, add the wild boar bacon and cook until crispy. Remove from heat and let it cool slightly, then chop into small pieces.

  2. 3

    Mix the Sauce

In a bowl, whisk together the fresh eggs, grated Grana padano cheese, and a generous amount of black pepper until well combined.

Combining

  1. 4

    Combine Pasta and Sauce

Add the drained spaghetti to the skillet with the bacon. Pour in the egg and cheese mixture while the pasta is still hot, tossing quickly to create a creamy sauce. If needed, add reserved pasta water a little at a time to achieve desired creaminess.

  2. 5

    Finish with Olive Oil

Drizzle the extra virgin olive oil over the pasta and mix well. Adjust seasoning with additional black pepper if desired.

Serving

  1. 6

    Serve

Plate the carbonara immediately, garnishing with extra grated Grana padano and black pepper to taste.
