Method

Pasta Preparation

  1. 1

    Make the Pasta Dough

In a mixing bowl, combine the all-purpose flour and eggs. Mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

  2. 2

    Cut the Noodles

Roll out the rested dough into thin sheets. Cut into desired noodle shapes, such as fettuccine or tagliatelle. Dust with flour to prevent sticking.

Sauce Preparation

  1. 3

    Cook the Noodles

Bring a large pot of salted water to a boil. Add the hand-cut noodles and cook for 2-3 minutes or until al dente. Reserve 1 cup of pasta water before draining.

  2. 4

    Prepare the Sauce

In a large skillet, melt the butter over medium heat. Add the black pepper and toast for about 1 minute. Add the cooked noodles to the skillet, tossing to coat.

  3. 5

    Combine and Serve

Gradually add the Parmesan cheese and reserved pasta water, stirring until creamy. Season with salt to taste. Serve immediately with extra cheese and pepper on top.
