Prepare the Crostini

    Slice the Baguette

    Preheat the oven to 400°F (200°C). Slice the baguette into ½ inch slices.

    Brush with Olive Oil

    Arrange the baguette slices on a baking sheet. Brush each slice with olive oil.

    Bake

    Bake in the preheated oven for about 8-10 minutes, or until golden brown and crispy.

Prepare the Topping

    Mix the Tomatoes

    In a large bowl, combine the diced Alberta tomatoes, white balsamic vinegar, and chopped fresh basil.

    Add Garlic Confit

    Squeeze the cloves of garlic confit into the tomato mixture, discarding the skins. Mix well.

    Season

    Season with salt and black pepper to taste.

Assemble the Bruschetta

    Top the Crostini

    Remove the crostini from the oven and let cool slightly. Spoon the tomato mixture generously onto each crostini.

    Add Goat Cheese

    Crumble goat cheese on top of each bruschetta.

    Serve

    Serve immediately while the crostini are still warm.
