    Prepare the Beef Tenderloin

    Preheat your oven to 400°F (200°C). Season the beef tenderloin generously with salt and black pepper.

    Sear the Beef

    In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the beef tenderloin and sear on all sides until browned, about 3-4 minutes per side.

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for 20-25 minutes for medium-rare or until the desired doneness is reached. Use a meat thermometer to check the internal temperature (135°F for medium-rare).

    Rest the Beef

    Remove the beef from the oven and let it rest for 10 minutes before slicing.

    Make the Demi Glace

    In the same skillet used for the beef, add red wine and scrape any browned bits from the bottom. Bring to a simmer and reduce by half. Add beef stock and reduce again until thickened, about 10 minutes.

    Add Foie Gras and Truffle Oil

    Lower the heat and whisk in the foie gras, butter, and truffle oil until smooth and creamy. Adjust seasoning with salt and pepper to taste.

    Slice the beef tenderloin and serve drizzled with the foie gras truffle demi.
