Preparation
- 1
Prepare the Crostini
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices. Brush both sides of each slice with olive oil and arrange them on a baking sheet. Bake for 8-10 minutes or until golden and crispy.
- 2
Prepare the Topping
While the crostini are baking, trim and halve the Brussels sprouts, then steam or sauté them until tender, about 5-7 minutes. In a bowl, combine the ricotta cheese, chopped parsley, lemon juice, dried cranberries, and the cooked Brussels sprouts. Season with salt and pepper to taste.
- 3
Assemble the Crostini
Once the crostini are baked and slightly cooled, spoon the ricotta and Brussels sprouts mixture generously onto each slice. Serve immediately.
