    In a bowl, mix olive oil, minced garlic, rosemary, salt, and black pepper. Marinate the lamb chops in this mixture for at least 30 minutes.

    Preheat a grill or skillet over medium-high heat. Remove lamb chops from the marinade and cook for about 4-5 minutes per side for medium-rare. Let rest before serving.

Panzerotti Dough

    Make the Dough

    In a mixing bowl, combine flour and salt. Create a well in the center, add the egg and water. Mix until a dough forms, then knead for about 5 minutes until smooth. Let rest for 20 minutes.

Filling and Assembly

    Prepare the Filling

    In a bowl, mix the olive oil poached lamb shoulder, ricotta cheese, Parmesan cheese, and chopped parsley until well combined.

    Fill the Panzerotti

    Roll out the dough into thin circles. Place a spoonful of filling in the center of each circle, fold over, and seal the edges by pressing with a fork.

    In a pot of boiling salted water, carefully drop the panzerotti and cook for about 4-5 minutes until they float. Remove and drain.
