Beef Tenderloin Preparation

Season the Tenderloin
Preheat the oven to 400°F (200°C). In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the beef tenderloin.

Sear the Tenderloin
In a large skillet over medium-high heat, sear the tenderloin for 3-4 minutes on each side until browned.

Roast the Tenderloin
Transfer the seared tenderloin to the oven and roast for 20-25 minutes for medium-rare. Use a meat thermometer to check for an internal temperature of 135°F (57°C). Let it rest for 10 minutes before slicing.
Braised Beef Short Rib Preparation

Prepare the Ribs
Season the beef short ribs with salt and black pepper.

Sear the Ribs
In the same skillet used for the tenderloin, sear the short ribs on all sides until browned, about 4-5 minutes per side.

Braise the Short Ribs
Cover the skillet and reduce heat to low. Simmer for 2-3 hours until the ribs are tender and falling off the bone. Discard bay leaves before serving.
