Base Ingredients

Carbonation Ingredients

Method

Preparation of Base

  1. 1

    Combine Water and Sugar

In a large pot, bring 4 cups of water to a boil. Once boiling, add 1 cup of sugar and stir until fully dissolved. Remove from heat and let it cool to room temperature.

  2. 2

    Add Yeast

Once the mixture has cooled, sprinkle 1 tsp of yeast over the surface and let it sit for 10 minutes to activate.

Flavoring

  1. 3

    Incorporate Flavors

Stir in 1 cup of lemon juice, 1 cup of lime juice, 2 tsp of ginger extract, and 1 tsp of your chosen natural flavoring to the yeast mixture. Mix well until fully combined.

Fermentation

  1. 4

    Ferment the Mixture

Cover the pot with a clean cloth and let it sit in a dark, warm place for 3-5 days. Check daily for bubbles, indicating fermentation is happening.

Finalizing the Hard Seltzer

  1. 5

    Add Carbonated Water

After fermentation is complete, gently stir in 2 cups of carbonated water. This will help to add the desired fizziness.

  2. 6

    Bottle the Seltzer

Using a funnel, pour the hard seltzer into clean bottles, leaving some space at the top. Seal tightly with caps.

  3. 7

    Chill and Serve

Place the bottles in the refrigerator for at least 24 hours before serving. Enjoy your Truly Hard Seltzer chilled!
