Chocolate Mousse Preparation
1. Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Allow it to cool slightly.
2. Whip the Cream
In a large mixing bowl, whip 1 cup of heavy cream with granulated sugar and 1 tsp of vanilla extract until soft peaks form. Set aside.
3. Beat the Egg Whites
In another clean bowl, beat the egg whites until stiff peaks form. This will take about 3-5 minutes with an electric mixer.
4. Combine Ingredients
Gently fold the melted chocolate into the whipped cream until well combined. Then, carefully fold in the beaten egg whites until no streaks remain. Be careful not to deflate the mixture.

In a mixing bowl, whip 1 cup of heavy cream with 2 tbs of powdered sugar and 0.5 tsp of vanilla extract until soft peaks form. Set aside.
