Preparation of Base

    Combine Ingredients

    In a medium saucepan, combine 4 cups of water, 1 tsp of quinine powder, 1 cup of sugar, 1 tsp of citric acid, and 1 cup of lemon juice.

    Heat Mixture

    Place the saucepan over medium heat and stir until the sugar and quinine powder are completely dissolved.

    Add Flavorings

    Once the sugar is dissolved, add the lime zest, lemon zest, coriander seeds, cardamom pods, and the cinnamon stick to the mixture.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 15 minutes to allow the flavors to meld.

Strain and Store

    Strain Mixture

    Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a clean container to remove the solids.

    Allow the tonic syrup to cool to room temperature.
