Pork Loin Preparation

    Prepare the Pork Loin

    Preheat your oven to 375°F (190°C). Take the pork loin and place it on a cutting board. Using a sharp knife, make a lengthwise cut down the center of the loin, ensuring to not cut all the way through.

    Stuff the Pork Loin

    In a mixing bowl, combine the boudin sausage (removed from casing), minced garlic, chopped parsley, salt, and black pepper. Mix well. Stuff this mixture into the cut of the pork loin, ensuring an even distribution. Use kitchen twine to tie the pork loin at intervals to secure the stuffing.

    Sear the Pork Loin

    In a large skillet, heat olive oil over medium-high heat. Once hot, sear the stuffed pork loin on all sides until browned, approximately 3-4 minutes per side.

    Bake the Pork Loin

    Transfer the seared pork loin to a baking dish. Brush the top generously with sweet chili sauce. Bake in the preheated oven for 30-40 minutes or until the internal temperature reaches 145°F (63°C). Allow to rest for 10 minutes before slicing.

    Activate the Yeast

    In a small bowl, combine the warm milk, sugar, and active dry yeast. Allow it to sit for about 5-10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center, add the melted butter, egg, and the activated yeast mixture. Mix until a soft dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place until doubled in size, about 1 hour.

    Shape the Rolls

    Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them in a greased baking dish.

    Second Rise

    Cover the rolls with a towel and let them rise again for about 30 minutes until puffy.

    Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes or until golden brown. Serve warm with the pork loin.
