For the Stuffed Pork Chops

    Prepare the Filling

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Add Apples and Walnuts

    Stir in the diced apples, chopped walnuts, thyme, salt, and black pepper. Cook for another 5 minutes, until the apples are slightly softened. Remove from heat and mix in the bread crumbs. Allow the filling to cool.

    Prepare the Pork Chops

    Using a sharp knife, make a pocket in each pork chop by cutting horizontally through the thickest part, being careful not to cut all the way through.

    Stuff the Chops

    Stuff each pork chop with the apple and walnut mixture, securing the opening with toothpicks if necessary.

    Cook the Chops

    In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear the stuffed pork chops on both sides until golden brown, about 4-5 minutes per side.

    Finish Cooking

    Transfer the seared pork chops to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven and let them rest for 5 minutes before serving.

    Cook the Potatoes

    Place the peeled and cubed potatoes in a large pot and cover with cold water. Add salt and bring to a boil over high heat. Reduce heat and simmer for about 15-20 minutes, until potatoes are tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Serve the mashed potatoes alongside the stuffed pork chops for a delicious meal.
