Method

Preparation of Ingredients

  1. 1

    Prepare the Chicken

Cut the chicken breast into bite-sized pieces and set aside.

  2. 2

    Chop the Vegetables

Slice the red and green bell peppers, carrot, and onion into thin strips.

Cooking

  1. 3

    Cook the Chicken

In a large skillet or wok over medium-high heat, add a tablespoon of oil and cook the chicken pieces until golden brown and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

  2. 4

    Stir-fry the Vegetables

In the same skillet, add another tablespoon of oil if needed, and stir-fry the chopped vegetables for about 3-4 minutes until slightly tender but still crisp.

  3. 5

    Make the Sauce

In a small bowl, mix together soy sauce, fish sauce, Sriracha sauce, brown sugar, and lime juice until well combined.

  4. 6

    Combine Everything

Return the cooked chicken to the skillet with the vegetables, pour the sauce over the mixture, and stir well. Cook for an additional 2-3 minutes until everything is heated through and the sauce thickens slightly.

Serving

  1. 7

    Garnish and Serve

Transfer the spicy Thai chicken to a serving dish, garnish with fresh cilantro and chopped peanuts, and serve hot.
