Cooking the Pasta

Boil Water
In a large pot, bring salted water to a boil over high heat.

Cook Pasta
Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
Preparing Shrimp and Tasso

Sauté Ingredients
In a large skillet, heat the olive oil over medium heat. Add the diced Tasso ham and sauté for about 3-4 minutes until slightly crispy.

Add Shrimp
Add the minced garlic and shrimp to the skillet. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side. Add the red pepper flakes and stir to combine.
Making the Sauce

Pour in the heavy cream and bring to a gentle simmer. Stir frequently, allowing the sauce to thicken slightly.

Add the cooked pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach desired consistency.
