For the Braised Short Ribs

    Prepare the Ribs

    Preheat your oven to 325°F (160°C). Season the short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear them until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened. Add minced garlic and sauté for another minute.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to deglaze. Let it simmer for about 2-3 minutes.

    Add Broth and Herbs

    Return the short ribs to the pot, add the beef broth, thyme, and bay leaves. Bring to a simmer.

    Braise the Ribs

    Cover the pot and transfer it to the preheated oven. Braise for about 4 hours or until the meat is tender and falling off the bone.

For the Roasted Vegetables

    Prepare the Vegetables

    While the ribs are braising, prepare the vegetables. Preheat a separate oven to 425°F (220°C). In a bowl, toss the fingerling potatoes, parsnips, and carrots with olive oil, salt, black pepper, and chopped rosemary.

    Roast the Vegetables

    Spread the vegetables on a baking sheet in a single layer and roast for about 25-30 minutes or until tender and golden brown, flipping halfway through.

For the Cherry Demi-Glace

    Prepare the Demi-Glace

    In a saucepan, combine cherry preserves, beef broth, and balsamic vinegar. Bring to a simmer over medium heat and cook until slightly thickened, about 10 minutes.

    Season the Sauce

    Season with salt and black pepper to taste. Remove from heat and set aside until ready to serve.
