Method

Preparation

  1. 1

    Make the Flavoring Mixture

In a medium saucepan, combine the sassafras root bark, sarsaparilla root, wintergreen leaves, licorice root, cinnamon stick, and grated nutmeg with 2 cups of water. Bring to a boil over medium heat.

  2. 2

    Simmer

Once boiling, reduce the heat and let the mixture simmer for about 30 minutes to extract the flavors.

  3. 3

    Strain the Mixture

After simmering, strain the mixture through a fine mesh sieve or cheesecloth into a bowl, discarding the solids.

Combining Ingredients

  1. 4

    Combine with Sugars and Yeast

In a large mixing bowl, combine the strained flavoring mixture, brown sugar, granulated sugar, vanilla extract, and yeast. Stir well until the sugars are fully dissolved.

  2. 5

    Add Remaining Water

Add the remaining 2 cups of water to the mixture and stir until combined.

Fermentation

  1. 6

    Let the Mixture Ferment

Cover the bowl with a clean cloth and let it sit at room temperature for about 24 hours to allow fermentation to occur.

  2. 7

    Check for Bubbles

After 24 hours, check for bubbles in the mixture, indicating fermentation. If bubbles are present, it's time to bottle.

Bottling and Carbonation

  1. 8

    Bottle the Root Beer

Using a funnel, carefully pour the fermented mixture into clean bottles, leaving about an inch of space at the top. Seal the bottles tightly.

  2. 9

    Add Club Soda

Just before serving, add club soda to each bottle for carbonation. Stir gently to combine.
