    Begin by dicing the bell peppers, onion, and celery. Mince the garlic and slice the green onions. Set aside.

    Cut the Andouille sausage into bite-sized pieces and the chicken thighs into chunks.

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced bell peppers, onion, and celery. Sauté for about 5 minutes until softened.
