Method

For the Paneed Chicken

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Set aside.

    Bread the Chicken

    Set up a breading station: Place flour in one bowl, beat the eggs in another bowl, and place bread crumbs in a third bowl. Dredge each chicken breast in flour, dip in eggs, and coat with bread crumbs.

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Transfer to a plate and keep warm.

For the Red Wine Sauce

    Sauté the Shallots

    In the same skillet used for the chicken, add the minced shallots and sauté until softened, about 2-3 minutes.

    Deglaze the Pan

    Pour in the red wine, scraping the bottom of the skillet to release browned bits. Bring to a simmer and reduce by half.

    Finish the Sauce

    Add chicken stock and fresh thyme to the skillet. Simmer for an additional 5 minutes. Stir in butter until melted and sauce is glossy. Season with salt and pepper to taste.

For the Jalapeño Cheese Grits

    Cook the Grits

    In a pot, bring water to a boil. Slowly whisk in grits and reduce heat to low. Cook for about 20-25 minutes, stirring frequently until thickened.

    Add Milk and Cheese

    Once grits are cooked, stir in milk, shredded cheddar cheese, diced jalapeño, and salt. Cook for another 5 minutes until creamy.

Assembly

    Plate the Dish

    On a plate, serve a generous scoop of jalapeño cheese grits, top with paneed chicken, and drizzle with red wine sauce. Add your choice of side.
