Dough

Method

Dough Preparation

  1. 1

    Mix the Dough

In a mixing bowl, combine the all-purpose flour and salt. Cut in the butter until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough.

  3. 3

    Chill the Dough

Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 4

    Cook the Filling

In a large skillet over medium heat, add ground beef or crawfish, onion, bell pepper, and garlic. Cook until the meat is browned and vegetables are tender.

  2. 5

    Season the Filling

Stir in green onions, cayenne pepper, paprika, salt, black pepper, and Worcestershire sauce. Cook for an additional 5 minutes and then remove from heat. Allow to cool slightly.

Assembly and Baking

  1. 6

    Preheat Oven

Preheat the oven to 375°F (190°C).

  2. 7

    Roll Out Dough

On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut into circles that are about 4 inches in diameter.

  3. 8

    Fill and Seal Pies

Place a tablespoon of filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by crimping with a fork.

  4. 9

    Brush with Egg

Place the mini pies on a baking sheet. Brush the tops with the beaten egg for a golden finish.

  5. 10

    Bake

Bake in the preheated oven for 20-25 minutes or until golden brown. Let cool slightly before serving.
