Preparation

  1. 1

    Prepare the Beans

Rinse the red beans under cold water to remove any debris. Soak the beans in water overnight or for at least 8 hours.

  2. 2

    Chop Vegetables

Dice the onion, bell pepper, and celery into small pieces to ensure even cooking.

  3. 3

    Slice Sausage

Slice the Andouille sausage into bite-sized rounds.

Cooking

  1. 4

    Cook the Vegetables

In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté until the vegetables are translucent, about 5-7 minutes.

  2. 5

    Add Sausage

Stir in the sliced Andouille sausage and cook for another 5 minutes until the sausage is browned.

  3. 6

    Add Beans and Spices

Drain the soaked beans and add them to the pot. Stir in garlic powder, cumin, thyme, bay leaves, salt, and black pepper.

  4. 7

    Add Water

Pour in the 3 cups of water. Bring the mixture to a boil, then reduce heat to low and cover the pot.

  5. 8

    Simmer

Let the mixture simmer for about 1 hour, stirring occasionally, until the beans are tender.

  6. 9

    Cook Rice

While the beans are simmering, rinse the rice under cold water. In a separate pot, combine the rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and cook for about 18 minutes or until rice is fluffy.

  7. 10

    Combine

Once the beans are tender, remove the bay leaves and stir in the cooked rice. Mix well to combine.

Serving

  1. 11

    Garnish and Serve

Chop the green onions and parsley. Sprinkle over the beans and rice mixture before serving for added freshness.
