Method

Preparation

  1. 1

    Chop Vegetables

Dice the onion, green bell pepper, celery, and mince the garlic.

  2. 2

    Prepare Crawfish

If using frozen crawfish tails, thaw them in the refrigerator overnight or under cold running water.

Cooking

  1. 3

    Make the Roux

In a large pot or Dutch oven, heat a few tablespoons of oil over medium heat. Add equal parts flour to oil, stirring constantly until you achieve a dark brown roux, about 15-20 minutes.

  2. 4

    Sauté Vegetables

Add the diced onion, green bell pepper, celery, and minced garlic to the roux. Cook for about 5-7 minutes until softened.

  3. 5

    Add Crawfish and Broth

Stir in the crawfish tails, diced tomatoes, and chicken broth. Bring to a simmer.

  4. 6

    Season the Mixture

Add the Cajun seasoning, bay leaves, salt, black pepper, thyme, and paprika. Stir well and let simmer for an additional 20 minutes.

Serving

  1. 7

    Serve Over Rice

Spoon the crawfish etouffee over cooked rice and garnish with chopped green onions and parsley.
