Peel and grate the fresh ginger root until you have about 2 cups. Set aside.

Cool the Mixture
Allow the mixture to cool to room temperature. This is important to avoid killing the yeast.

Seal the bottles tightly and store them at room temperature for another 3 to 5 days to carbonate. Check daily to avoid over-carbonation.
