In a medium bowl, pour the buttermilk over the peeled and deveined shrimp. Cover and refrigerate for at least 30 minutes to marinate the shrimp.

In a shallow dish, combine the all-purpose flour, cornmeal, Cajun seasoning, salt, and black pepper. Mix well to ensure an even distribution of the spices.

Remove the marinated shrimp from the refrigerator. Dredge each shrimp in the flour mixture, making sure to coat them evenly. Shake off any excess flour.

In a large, heavy-bottomed pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the breaded shrimp in batches, frying for about 2-3 minutes or until golden brown. Use a slotted spoon to transfer the fried shrimp to a paper towel-lined plate to drain any excess oil.

Slice the French bread or po-boy rolls lengthwise without cutting all the way through, creating a pocket for the fillings.

Spread a generous amount of mayonnaise on the inside of the bread. Layer with shredded lettuce, sliced tomatoes, pickles, and finally, the fried shrimp.
