Sweet Potatoes

Fried Sage

Method

Preparing Sweet Potatoes

  1. 1

    Peel and Chop

Peel the sweet potatoes and chop them into evenly sized chunks (about 1-inch pieces) to ensure even cooking.

  2. 2

    Boil

Place the chopped sweet potatoes in a large pot, cover with water, and add 1 tsp of salt. Bring to a boil over medium-high heat and let cook for about 15-20 minutes or until fork-tender.

  3. 3

    Mash

Drain the water and return the sweet potatoes to the pot. Add 2 tablespoons of butter and mash with a potato masher until smooth and creamy. Adjust seasoning if necessary.

Frying Sage

  1. 4

    Heat Oil

In a small skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.

  2. 5

    Fry Sage

Add the fresh sage leaves to the skillet and fry for about 1-2 minutes until they become crispy. Remove with a slotted spoon and place on a paper towel to drain excess oil.

Assembling the Dish

  1. 6

    Plate the Mash

Spoon the sweet potato mash onto a serving dish, spreading it out evenly.

  2. 7

    Garnish

Crumble the fried sage leaves on top of the mash, sprinkle with fresh ground black pepper, and add chopped pecans for an extra crunch.
