Prepare the Boudin Filling

    Cook the Sausage

    In a skillet over medium heat, remove the boudin sausage from its casing and crumble it into the skillet. Cook for about 5 minutes, stirring occasionally, until heated through.

    Add the chopped green onions, diced bell pepper, and minced garlic to the skillet. Cook for an additional 3-4 minutes until the vegetables are softened.

    Combine Ingredients

    Transfer the sausage and vegetable mixture to a mixing bowl. Add the bread crumbs, egg, salt, and black pepper. Mix until well combined.

    Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes to help it firm up before shaping.
