Method

Preparation of Cheese Grits

  1. 1

    Cook the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 0.5 tsp of salt, stirring constantly.

  2. 2

    Simmer the Grits

Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

  3. 3

    Add Cheese and Jalapeños

Once the grits are cooked, stir in the butter, cheddar cheese, and chopped roasted jalapeños until melted and combined. Keep warm.

Preparation of Shrimp

  1. 4

    Sauté the Garlic

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

  2. 5

    Cook the Shrimp

Add the shrimp to the skillet, along with the paprika, cayenne pepper, Worcestershire sauce, hot sauce, chicken broth, salt, and black pepper. Cook until the shrimp turn pink and opaque, about 3-5 minutes.

  3. 6

    Finish with Green Onions

Stir in the chopped green onions and cook for an additional minute. Remove from heat.

Plating

  1. 7

    Serve

Spoon a generous portion of the cheese grits onto each plate. Top with the shrimp and drizzle with the BBQ sauce from the skillet. Garnish with additional green onions if desired.
