Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Form the Crust
Press the crumb mixture into the bottom of a 9-inch springform pan evenly. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and allow to cool.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and mix until well combined.

Add Remaining Ingredients
Add the sour cream and vanilla extract to the cream cheese mixture and beat until smooth. Add the eggs one at a time, mixing well after each addition.

Pour into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

Bake the Cheesecake
Bake in the oven at 325°F (160°C) for 55-65 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Remove from the oven and cool completely at room temperature.

Prepare the Topping
In a small saucepan, heat the heavy cream with the vanilla bean (split and scraped) over medium heat until it just starts to simmer. Remove from heat and let it steep for 15 minutes.

Caramelize the Sugar
Once the cheesecake is completely cooled, pour the infused cream over the cheesecake. Sprinkle the granulated sugar evenly over the top of the cheesecake. Use a kitchen torch to caramelize the sugar until golden brown. If you don't have a torch, place the cheesecake under the broiler for a few minutes, watching closely to avoid burning.

Cool and Serve
Allow the caramelized sugar to cool and harden for a few minutes before slicing and serving the cheesecake.
