    In a large pot over medium heat, melt the butter. Once melted, gradually whisk in an equal amount of flour to create a roux. Stir continuously until the roux turns a deep brown color, about 15-20 minutes.

    Add the chopped onion, bell pepper, and celery to the pot. Sauté the mixture for about 5-7 minutes until the vegetables are softened.

    Incorporate Garlic and Tomatoes

    Stir in the minced garlic and diced tomatoes, cooking for an additional 2-3 minutes until fragrant.
