Sage Sweet Potatoes

Method

Chili Butter Shrimp

  1. 1

    Prepare the Shrimp

In a medium bowl, combine the shrimp with salt, pepper, and chili powder. Toss to coat evenly.

  2. 2

    Cook the Shrimp

In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the seasoned shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque. Stir in lemon juice and remove from heat.

Asparagus

  1. 3

    Prepare the Asparagus

Preheat your oven to 400°F (200°C). In a bowl, toss the trimmed asparagus with olive oil, garlic powder, salt, and black pepper until evenly coated.

  2. 4

    Roast the Asparagus

Spread the asparagus in a single layer on a baking sheet. Roast in the preheated oven for 12-15 minutes until tender and slightly charred, stirring halfway through.

Sage Sweet Potatoes

  1. 5

    Prepare the Sweet Potatoes

While the asparagus is roasting, place the diced sweet potatoes in a large pot of salted water. Bring to a boil and cook for about 15-20 minutes until fork-tender.

  2. 6

    Sauté the Sweet Potatoes

Drain the sweet potatoes and return them to the pot. Add olive oil, chopped sage, salt, and pepper. Sauté over medium heat for about 5-7 minutes until they are slightly crispy on the outside and heated through.
