    Prepare the Chicken and Sausage

    Cut the chicken thighs into bite-sized pieces and slice the Andouille sausage into rounds.

    Chop the Vegetables

    Chop the onion, green bell pepper, and celery into small pieces. Mince the garlic.

Cooking

    Sauté the Meat

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken and sausage, cooking until the chicken is browned and the sausage is slightly crispy, about 5-7 minutes.

    Add the chopped onion, bell pepper, celery, and minced garlic to the pot. Sauté until the vegetables are softened, about 5 minutes.
